At the heart of Raj Gate sits the tandoor — a clay oven blazing hot enough to sear a lamb chop in seconds and lock the smoke into the bread.

It's the oldest trick in the book, and there's no shortcut for it. Just fire, timing, and a cook who's done it ten thousand times.
